Cheese is a perfectly healthful and nutritious food (think organic for dairy...) and when used as a condiment, there is little concern regarding the cholesterol or fat content. I don&#039;t measure when I cook, but I would estimate that in this dish, which when using 5 medium beets will feed 2 - 3 people as a side dish, I would add 1/4 cup of crumbled blue cheese. It&#039;s a key ingredient in this recipe in terms of adding zip and contrast to the other flavors. 

Yes, I buy the turkish apricots at Briarpatch, in the cold case of the bulk section. They&#039;re pre-bagged and with the raisins, currants, and dates, etc. 

I&#039;d love to know what you think of this scrumptious dish!
